Description: Baking soda is produced through the Solvay process by reacting sodium chloride, ammonia, and carbon dioxide, serving as a versatile leavening agent, pH regulator, and cleaning compound. When heated above 50°C or combined with acids, it releases carbon dioxide (expands dough by 2-3x volume), while its mild alkalinity (pH 8.4 in 1% solution) neutralizes odors and softens water. Applications range from food (baked goods, effervescent tablets) to fire extinguishers (BC powder) and personal care (toothpaste abrasion index 70-100 RDA).
