With solubility of 58.2g/100mL in water (20°C), it is widely used in beverages (0.03-0.2%), dairy products (0.05-0.3%), and baked goods (0.1-0.3%), demonstrating superior activity at pH<6.5. The compound decomposes above 270°C and is metabolized as a fatty acid in humans (LD50>5g/kg).
