Description:Disodium dihydrogen pyrophosphate is produced through controlled thermal dehydration of sodium phosphate at 200-300°C, serving as a multi-functional food additive (E450i) with slow acid release properties. Its unique double-phosphate structure provides:

Leavening: Reacts with NaHCO₃ at 45-55°C (delayed action in baked goods)

Emulsification: Chelates metal ions in processed cheeses

pH Control: Maintains acidity (pH 4.0-4.5 in 1% solution)
