Description: Sodium pyrophosphate is produced through thermal dehydration of disodium phosphate at 500-600°C, serving as a multi-functional phosphate with superior emulsification and protein modification capabilities. Its P₂O₇⁴⁻ structure provides:

Sequestration: Binds metal ions (Ca²⁺ chelation value 150mg/g)

Buffering: Maintains pH 10-10.5 in solutions

Dispersancy: 3x better than STPP in pigment suspensions

Applications

Meat Processing: Improves tenderness in poultry (0.3-0.5%)

Toothpaste: Tartar control agent (5-10%)

Oil Drilling: Clay stabilizer in fracking fluids
