Description: Calcium dihydrogen phosphate is produced through reaction of phosphoric acid with calcium carbonate or phosphate rock, serving as a fast-acting leavening acid in baked goods (reacts with NaHCO₃ at room temperature), fertilizer phosphorus source (water-soluble P₂O₅ ≥50%), and mineral supplement in animal feed (Ca:P=1:1). The monohydrate form (food grade) releases CO₂ rapidly during dough mixing, while anhydrous type (industrial) provides slower reaction for processed meats. Its acidic nature (pH 3-4 in 10% solution) also functions as pH regulator and metal chelator in food systems.
