Description: Maltodextrin is produced through partial enzymatic hydrolysis of starch (corn, potato, or tapioca), characterized by its DE value (Dextrose Equivalent: 3-20) which determines the degree of hydrolysis – lower DE values (3-10) provide less sweetness but better film-forming properties, while higher DE (10-20) offers higher solubility and moderate sweetness. It serves as a versatile food additive (E1400) for texture modification (bulking agent in low-fat foods), flavor carrier (spray-dried powders), and energy booster (sports nutrition). With high water solubility (easily dissolves in cold water) and low viscosity, it's widely used in instant foods, beverages, and pharmaceutical tablets as a binder/filler.
